I still remember when I was six years and I made Mascarpone Cream from the first time…! My nonna (grandma in Italian) used to make the most delicious cream to prepare the Tiramisú, one of my favourite puddings, and after watching her making it for times and times again, I was finally allowed to give it a go! Well, it is such an easy recipe that you should try it yourself!
300 gr Mascarpone Cheese (I’ve tried Tesco, Sainsbury and Lidl's and probably the Lidl one is the more similar to what you would find in Italy)
4 Tbsp Granulated Sugar
Separate the egg yolks from the egg whites. Whisk the whites until firm. In the meantime, beat the egg yolks with the sugar until light and fluffy, then add the mascarpone and mix well until you have a smooth mixture. Add the egg whites paying attention not to overmix them. Done!!! Super simples, isn’t it?
But what can you do with Mascarpone Cream?
Well, you can use it to prepare Tiramisú if you wish, or you can prepare some lovely individual cups of mascarpone cream sprinkled with icing sugar or chocolate chips, and accompanied by some biscuits. Or you can alternate layers of mascarpone cream with layers of fresh strawberries and sprinkled with crushed meringues (perfect as a summer pudding!). Lastly, you can the mascarpone cream to accompany a slice of my individual Panettone, as many Italians do at Christmas! It is just the perfect combination!
